Our Story

At the very young age of 17, I was taught that there is no excuse for poor quality. If you start with poor quality, you end up with poor quality.

Flash Forward to 2006, and listening to my late brother Gary constantly telling me “You have to come to Texas and learn how to do brisket the right way…The Texas way!”

After five trips to Texas in one summer, and selling my Harley Davidson motorcycle (full dresser), I purchased a Southern Pride Pit Smoker big enough to smoke 500lbs. of meat at one time. I guess you could say I was committed at that point.

Then came the birth of “Elia’s Texas Connection” and 14 years of catering everything from backyard BBQ’s to serving Cardinal Dolan, Dee Snider, and Snooky, only to mention a few.

Over 200 street festivals and 6 years at the Dutchess County Fair, we figured that it was time to settle in and open our passion project, Elia’s BBQ Pit.
